Nathan the Butcher, meat guru from The Butchery, is going to prepare aged sirloins from three different breeds slaughtered at the same time and as far as possible fed and cared for the same way. These three meats will be served in succession 'blind' with one other, how shall we say, less favoured beast. There will also be carpaccio. Oh and James Handford, Master of Wine, will prepare a horizontal flight of same aged Bordeaux, again with a ringer. Served blind. There is only room for 40 people.
